Snow Globe Dining Experience: Gondola Retreat in Western Colorado
A longstanding holiday tradition in western Colorado, Grand Junction’s Hotel Maverick transforms its rooftop terrace into a winter wonderland, offering a snow globe dining experience against panoramic views of the Grand Mesa and Colorado National Monument. From November through March, guests can cozy up and enjoy a festive meal of regionally inspired dishes and specialty craft cocktails in private, illuminated igloos and gondolas at Devil’s Kitchen, the restaurant and bar atop the hotel.

Miracle Bar at Jax Fish House & Oyster Bar Colorado Springs
On Nov. 18, Jax Fish House’s Colorado Springs location transformed into the world-famous holiday pop-up bar extravaganza Miracle Bar. Colorado Springs’ only Miracle Bar location, and one of just three in the state of Colorado, the famed pop-up bar brings the festive magic of the season to life with over-the-top décor, themed cocktails in signature holiday glassware and enough holiday spirit to melt the heart of even the frostiest Grinch. Winter Wonderyard Holiday Pop-Up at Wonderyard Garden + Table
In its debut year, Wonderyard Garden + Table is transforming its Ballpark location into Winter Wonderyard for the holiday season starting Nov. 20. The immersive pop-up features elegant holiday decor indoors and throughout the 2000 square-foot outdoor tented patio, including a towering 15-foot Christmas tree, whimsical eight-foot reindeer and a life-sized sleigh for festive photo opps. The dazzling winter menu boasts eight signature cocktails like the Jolly Ginger-tini and Santa Spritz, as well as shot-filled ornaments for elf-sized libations, shotskis and shareable cocktail trees. Perfect for gatherings, holiday photos, or simply soaking up the magic, this is one holiday pop-up you won’t want to miss!

Felix Navidad Holiday Pop-Up at My Neighbor Felix
Denver’s favorite holiday pop-up, Felix Navidad, returns on Nov. 20 to all four My Neighbor Felix locations. An explosion of holiday cheer, the restaurants transform into a winter wonderland with elaborate decorations and Instagrammable moments throughout. The pop-up menu includes eight signature cocktails including the sharable Slay Ride as well as a Sugar & Spice martini, a pair of naughty or nice old fashioneds, Santa’s hot cocoa and the beloved signature cookie shots. My Neighbor Felix will also host a Jingle and Mingle party at the Centennial location on Dec. 20 and at the LoHi location on Dec. 21 from 8-10 p.m. Meanwhile, the Colorado Springs location will host Santa’s Workshop on Dec. 12 and 13, with tickets including a welcome cocktail and unlimited gift-wrapping supplies.

Halcyon on Ice
Returning for its second year, Halcyon on Ice is a mountain escape in the Mile High City; visitors can immerse in genuine European alpine culture without leaving Denver. Open daily from noon-9 p.m., Friday, Nov. 15 through Tuesday, Dec. 31, the transformed rooftop après lounge will feature specialty food and drink menus, curated music and a massive new ice-skating rink, all surrounded by breathtaking views of the Rocky Mountains. Halcyon on Ice is free to attend, and food, drinks and ice skate rentals are available for purchase (rentals are $5 per person or guests are welcome to bring their own pair).
