Olive & Finch Brings “Fine-Casual” Dining To Denver In Union Station
The “fine-casual” eatery from chef Mary Nguyen will open in the former Snooze space in the iconic transportation hub in early 2025
Olive & Finch, a “fine-casual” eatery from chef Mary Nguyen, will open in Denver Union Station in early 2025. The third location of Olive & Finch will occupy the 1,879 square-foot space that formerly housed Snooze A.M. Eatery inside the iconic transportation hub.
“We’re thrilled to bring our chef-crafted fare to such an important and central downtown Denver landmark,” says chef and founder Mary Nguyen. “From quick breakfasts and coffee on the go to cocktail hour and dinner dates, Olive & Finch offers something for every occasion and craving.”
Olive & Finch Union Station will be open for dinner, happy hour, lunch and breakfast. It will offer a more robust selection of grab-and-go options than other Olive & Finch locations for travelers, including its own proprietary line of cold-pressed bottled juices, sandwiches, salads and more. The quick-service restaurant will also have a full craft coffee program, a liquor license and an emphasis on fresh-baked savory pastries and sweet treats.
A self-taught chef and prominent member of Denver’s culinary community for more than two decades, Nguyen began her career in the hospitality industry at Denver restaurants The Beehive and Hapa Sushi, where she earned the distinction of being the only female executive sushi chef in North America at the time. Nguyen opened Parallel Seventeen, a Vietnamese French bistro to wide acclaim in 2005, followed by Street Kitchen in 2011.
In 2013, noticing a void of chef driven scratch made casual restaurants, she opened Olive & Finch, a “fine-casual” concept where food is affordable, accessible yet still scratch made and chef driven. A second Olive & Finch debuted in 2017 in Cherry Creek and wholesale operations, Olive & Finch on the Fly, followed in 2018. Nguyen is also working on a forthcoming Olive & Finch location at the Denver Performing Arts Center, which is also slated to open in early 2025. Nguyen is deeply committed to mentorship and advocacy within the Colorado culinary and AAPI communities, as well as giving back to nonprofit organizations and sourcing Colorado-made products to support the local economy.

Denver Union Station recently completed an extensive refresh that included a redesign of the bustling Great Hall and a remodel of all 112 luxurious Crawford guest rooms. Snooze will be relocating to another location inside the historic destination this fall.
