With ski resorts just starting their lifts and people planning their dining reservations for after a long day on the slopes, diners, who want something new to experience, are asking themselves: what’s for dinner?

Steamboat’s locally-focused, sustainability superstar Yampa Valley Kitchen (VYK) has recently launched a dinner menu, a rich and romantic dining experience in a cozy 1900s farmhouse. The dinner menu includes 7x Ranch wagyu beef Stroganoff with King Trumpet mushrooms, locally raised Chicken and Duck Liver Pate; Wild Caught Petrale Sole with leeks, glazed carrots, carrot puree, golden raisin beurre blanc, dill, chive oil; Buttermilk Fried Hayden Fresh Farm Chicken; and Duck à L’Orange with Hayden Fresh Farm Peking duck breast, confit duck thigh, tarragon lentils, pain purdue, bitter orange puree, orange supreme, and duck jus. YVK, opened in 2020, sources everything it can from Colorado, including Front Range purveyors, Steamboat Springs producers, and even its own backyard – literally.

Alongside a full mocktail menu, including the iconic Orange Julia and orange juice, cream, vanilla, aquafaba, turbinado, vanilla, jones vodka or Seedlip citrus, YVK’s crave-worthy cocktail menu includes libations like Knickerbocker Sour with Mythology whiskey, raspberry liqueur, raspberry powder and Toschi cherry and The Grasshopper with Giffard white crème de cacao, Giffard crème de menthe, cream, mint, and cacao nibs.
