Boulder's newest gathering space combines elevated dining, craft cocktails, coworking, and community events under one stunning roof

Hello my fellow foodies and welcome back. I am so excited to tell you about my recent foodie adventure in Boulder, CO. There is a new community space that opened a month ago called East & Co. I got the chance to attend their grand opening and was completely blown away, so I thought I would share the love and give you the lowdown on this fabulous new addition to Boulder.

East & Co is a Working Title Food Group concept with space for meetings, lectures, hanging out with friends, and throwing parties. The building is jaw dropping and when you visit, you will see what I mean. The modern architecture and comfy seating creates the space for staying as the website says, “5 minutes or 5 hours”, and that is exactly how East & Co wants you to feel. The space comes complete with a full bar, restaurant, lounging space, working space, a lecture room, an outside lawn area and a game room. There is no pushing you out the door if you stay too long. The vibe is chill, and you can even ride your bike there, as they have a bike room for you to store it.

East & Co opens at 7 am every morning with grab and go food and coffee or a sit down breakfast perfect for that early morning meeting. If you are dining in, you can order food at the restaurant, or anywhere that you decide to sit. There are grab and go sandwiches for lunch and just like breakfast, you can sit down, relax and eat in-house. There are a few dinner options like Halibut Veronique if you are getting hungry around that time of day, and the in-house menu is filled with a large selection of handheld sandwiches which all looked delicious.

As soon as I heard that they were launching happy hour, my foodie antenna went up, and I was lucky enough to get a little preview of the dishes before it went live. Foodies rejoice, the happy hour runs from 4-7pm Monday- Friday! The menu for happy hour is chock full of elevated small plates and drink specials. Some of my favorites were the Queso A La Plancha, and The Barbacoa Tostada. If you are a cheese lover, The Queso A La Plancha is a perfectly smokey small plate, and honestly one of the best happy hour dishes I have had. The tostada was a dish that they had at the grand opening, and I am elated that they decided to put it on the permanent menu.  Topped with slow braised beef, guacamole, and pickled onions, it is a not to be missed happy hour option. The East & Co Old Fashioned made with brown butter washed bourbon is on the happy hour menu and is a perfect match to all your small plates. Every single dish on the happy hour menu was presented like a work of art and tasted like a culinary masterpiece. It truly is everything I was looking for in a Boulder Happy Hour.
