Opening Fall 2023, a Scratch and Locally Sourced Menu Supports a Full Cocktail Bar and 300+ Wine Labels at The Velvet Cellar
The downtown Denver food and wine scene is about to be elevated by the addition of The Velvet Cellar, featuring a chef-driven cuisine and a wine program that matches the caliber of its food. A menu of fresh ideas and familiar flavors is crafted by Chef Todd Bobrovicz, who holds two decades of experience in Colorado’s restaurant industry and strong relationships with Colorado producers. The restaurant’s goal is to offer a completely unique and individually tailored guest experience that instantly becomes a cherished memory. Owners and childhood friends Reilly Chunn and Chris Dominey share a Southern upbringing and appreciation of the region’s known hospitality. Their vision, five years in the making, becomes reality in the coming months.
“We’re setting a high ceiling for ourselves because of the ambition our team brings and the talent we’ve secured,” said Chunn. “It’s a point of pride to execute at a high level because the people living, working and visiting downtown deserve it.”
The Velvet Cellar breathes new life into its home at 1500 Wynkoop in Denver, using the existing exposed brick and wood on the walls of the historic building as its canvas. The design adds thoughtful touches to produce a warm and inviting space that guests can feel at home in, sitting back to relax and tuck into a memorable meal. A few notable sights include thousands of wine bottles on display, velvet banquette seating, and a peek into the kitchen to witness Bobrovicz orchestrating his culinary symphony.
The menu Bobrovicz is developing will feature a variety of regional and international cuisines to complement and synergize with the diversity of wine styles and origins offered. He’s planning to source mainly from Colorado farmers and ranchers while also featuring freshly made items like cured meats, cheeses, bread, desserts and more.
The wine program, supported by a full cocktail bar and selection of beers on tap, will boast between 300-400 different labels. Dominey, with a passion for all things wine, is working toward his Level 4 Diploma in Wines from the Wine & Spirit Education Trust (WSET) and loves discovering unique winemakers with wines worth sharing. Guests of The Velvet Cellar can have full trust and confidence that their sommelier will meet them wherever they are, ultimately giving power to the guest to select the appropriate wine or beverage to enhance their dining experience.
“Wine is something that brings a whole meal together. It’s an encapsulated moment of time that only exists when the bottle is opened,” said Dominey. “Wine also tells a story, unique to each person, and makes any experience fuller.”
