Get out of the house & ditch the in-laws this holiday season with a special Laws Whiskey Dinner on Wednesday, Dec. 28th at For[a]ged – the modern Japanese-inspired kitchen & raw bar by Chef Duy Pham at Dairy Block.
Led by James Germain from Laws Whiskey House, this exclusive dinner will feature five decadent courses, each paired with a special Laws Whiskey House selection. Priced at $75 per person, the menu will include:
Welcome Bite & Cocktail: Cold Smoke Elk Carpaccio – with green peppercorn goat cheese crema, roasted beet and fig jam, orange supreme & mint salad.
Pairing: Laws San Luis Valley Straight Rye
First Course: Seared Scallop – with beurre noisette cauliflower puree, apple-pineapple pepper relish, pea shoot & pomegranate caviar.
Pairing: Laws Centennial 5 Year Bottled In Bond Wheat
Second Course: Cornish Game Hen Roulade – with fresno apricot jam & micro cilantro salad.
Pairing: Laws Four Grain 8 Year Bottled In Bond Bourbon
Third Course: Smoked Lamb Rack – with honey nut squash puree & mint-apple fennel.
Pairing: Laws Henry Road Six Year Bottled In Bond Malt
Fourth Course: Cherry Venison Sausage – with orange serrano slaw, Cumberland sauce & toasted hazelnuts.
Pairing: Laws San Luis Valley 7 Year Bottled In Bond Rye
Fifth Course: Crisp Moulard Duck Breast – with coffee cognac reduction & roasted baby vegetables.
Pairing: Laws Cognac Finished Four Grain Bourbon
The evening will begin with a 6 pm Welcome Reception followed by dinner starting at 6:30 p.m. Seating is limited and advanced reservations are required here.
Created by Brent Walker, Meghan Gold and Chef Pham, the sunlit For[a]ged space includes an upstairs mezzanine with a raw bar and a large whiskey-driven bar area that offers more than 100 whiskey & scotch selections, along with premium cocktails developed in house. Diners can enjoy For[a]ged’s major sculpture created by Colorado artist Price “Ted” Davis. The massive 32 foot long chandelier is suspended above the For[a]ged dining room and features more than 300,000 luxurious hand-strung crystal beads.
