New Elevated Cocktail Bar Inspired by the Caribbean Opens July 20th on Larimer Square

Emerald Eyean elevated new cocktail bar inspired by the Caribbean circa 1955, is excited to officially open underneath downtown Denver’s Larimer Square on Thursday, July 20th.

Created by Pouring With Heart – a bar hospitality group focused on preserving bars and building industry careers with care – Emerald Eye will serve a menu featuring playful modern riffs on time-honored classic cocktails that are crafted by a passionate bar team.

Menu highlights include the Carajillo, an espresso cocktail made with Licor 43, cold brew and Torres 10 Brandy, and La Esmerelda, featuring raicilla, green chartreuse and vermouth. Emerald Eye will be donating $1 from each Emerald Eye Daiquiri sold through the end of October to Denver non-profit the 87 Foundation. Emerald Eye’s back bar will also feature a thoughtfully curated selection of rum and agave spirits plus bottled beer and wine.

Carajillo

Located underneath Denver’s iconic Larimer Square, the Emerald Eye space will transport patrons to the Caribbean through its dark tropical design featuring shining green tile, vintage-inspired lighting, and botanical wall coverings with a colorful yet muted palette. Adorned with eye-shaped motifs and artwork and taxidermy depicting tropical flora and fauna – including murals created by local artist, Rachel Yarbrough, of Little Bones Signs – the Emerald Eye design evokes a playful nighttime feel that is sure to enchant visitors to the space, which includes a main bar, a lounge area and a dance floor.

Emerald Eye Shake

Emerald Eye will feature DJs every Friday and Saturday from 10 p.m. – 2 a.m. spinning Calypso, Afrobeats, Dancehall and Reggae.

Located at 1403 Larimer Street, Emerald Eye will open at 6 p.m. nightly, with Happy Hour discounts of $1 off all cocktails and $2 off beer and wine nightly from 6 p.m. – 8 p.m.
