Summit Steak Bar
A modern steakhouse brings premium cuts, craft cocktails and a hidden speakeasy to Littleton
Summit Steak Bar, a modern steakhouse anchored by an in-house cutting and dry-aging program with a bar that’s built for steak, is now open at 5869 S. Alkire St., Suite B., in Littleton, Colorado.
The menu’s high-quality cuts span 2GR Premium Wagyu, USDA Prime, Certified Angus Beef. These cuts are handled on-site, from the butcher shop to the dry-aging room where the beef ages under controlled temperature and humidity until it reaches the desired depth and tenderness. Knowledgeable waitstaff help diners find the exact cut that satisfies every preference and craving, detailing tenderness, flavor, marbling and its grade.
Summit Steak Bar is committed to offering a new world steakhouse experience while maintaining old world hospitality. Their menu appeals to broad swaths of guests — those who have an appreciation for a steak’s detail and quality, seeking a great steak in a casual, unfussy setting, cocktail enthusiasts and everyone in between.
Adding to the experience are house-made sauces — whiskey au poivre, huckleberry steak sauce, Périgourdine and more — and the signature proprietary gunpowder seasoning, finished in a cast-iron skillet for an Old West-style char. Premium steak upgrades include a bone marrow canoe, grilled shrimp, Oscar-style and poached cold water lobster.
Shareable sides that complement the steaks include fire-roasted elote, seared mushrooms, charred carrots with a hot honey glaze, several styles of potato (whipped, a signature “porcupine” baked potato and beef tallow fries) and more. The menu also features a selection of soup, salad and appetizers — from traditional steakhouse bread service (house-made focaccia and brioche) to shrimp cocktail, and out-of-the-box offerings such as steak fondue, Avery Island Alligator, KFC (Kobe fried chicken) and A5 Wagyu seared tableside (Miyazaki A5 wagyu strip, wagyu tallow garlic fried rice, fresh wasabi, flaky sea salt and ponzu sauce). Alternative entrees are also available, including wild mushroom chicken, bison meatloaf, a dry-aged burger, mushroom pappardelle and the show-stopping Billionaire Tiffany & Co. Sword of General Custer – a modern take on an ultimate mix grill surf and turf.
The beverage program at Summit Steak Bar is built around the steak, designed to pair with the meal and stand up to its bold flavors. It encompasses spirits — including a vast bourbon list — wine, available by the bottle or glass in five- or eight-ounce pours, beer and specialty cocktails. Most notable signature cocktails include the house-designed Summit Old Fashioned and Pornstar Martini.
Additional pre-prohibition-style cocktails and rare spirits are found in the members-only speakeasy, High Steaks Club. Guests can acquire speakeasy access through an exclusive membership coin – the coin is $500 with limited availability. The intimate space features art-deco décor, several deuce booths and a refurbished 1800s bar.
Husband-and-wife duo George and Tammy Pesek own Summit Steak Bar. Chef-owner George Pesek has worked in restaurants throughout his life and is also an accomplished mountaineer who has completed The Seven Summits, which inspired the name of the steak bar, names of several dishes and the artwork and décor. Photography throughout Summit Steak Bar celebrates mountain culture and takes inspiration from mountaineering both inside and outside of the state, including photography of scenic vistas, custom chandeliers and glassware — even an original Everest oxygen tank repurposed as a sconce.
The space is contemporary with an oversized, backlit onyx bar that imbues a sense of coziness into the moody interior. Rich earth tones define the space, from the dark greens of the walls and tufted leather seating to stone wall masonry and warm wood carpentry. Summit Steak Bar also features a private dining room for up to 14 guests, fit for business dinners, birthdays, holiday gatherings, rehearsal dinners and more.
Summit Steak Bar is open Sunday through Thursday from 5-9 p.m., and Friday and Saturday from 4-10 p.m. For more information, visit summitsteakbar.com.
