Freshly Baked Cookies Straight From The Window Of Happiness
ButterPunk Cookies bringing everything you want in a cookie with a curated menu that will have you wanting more
Big Red F Restaurant Group, the independently owned and operated group behind Jax Fish House & Oyster Bar, The Post Chicken & Beer, Centro Mexican Kitchen, West End Tavern and Velvet Elk Lounge, is excited to launch its newest venture: ButterPunk Cookies. Operating takeout-only from Window of Happiness, a walk-up, bodega-style window at The Post Chicken & Beer’s LoHi location, ButterPunk specializes in freshly baked warm cookies.
Corina Johnson, The Post LoHi’s executive chef, is the brainchild behind the ButterPunk brand. Johnson spent her first 12 years in the culinary industry as a pastry chef, working at renowned establishments such as Rubicon in San Francisco and alongside celebrated chef Elizabeth Falkner. At ButterPunk, Johnson flexes her pastry expertise with a tightly curated menu of cookies. Johnson describes her cookie style as “nailing everything you want in a cookie – chewy, crunchy, buttery, not too sweet with a nice balance and crumb.”
“I’ve always loved cookies and how they just make people happy, and it’s long been a dream of mine to open a cookie shop,” Johnson says. “When Big Red F approached me about this opportunity at Window of Happiness, I was absolutely thrilled to bring my vision for ButterPunk to life.”
ButterPunk’s menu features four core cookie flavors, including the “Do What You Want,” a classic chocolate chip recipe with sea salt that Johnson has spent seven years perfecting; the “Crowd Surfer,” a soft chocolate and peanut butter chip cookie; “The Minimalist,” a soft-batch gooey vanilla sugar cookie; and the “Slam Dance,” with butterscotch and toasted coconut. “Deceptacon,” the gluten-free cookie, features chocolate chips, pecans, Nutella and sea salt. ButterPunk will also offer a rotating monthly feature, kicking off with “the Anti Cookie” – a chewy lemon-blueberry cross between a brownie, cookie and a bar. Vegan-friendly treats are in the works.
Guests can purchase cookies individually ($5) or by the half-dozen ($27) and dozen ($54). Frozen cookie dough by the dozen ($48) will also be available for those who want to bake their own treats at home.
In addition to the signature ButterPunk cookies, Window of Happiness will serve “Happy milkshakes” in flavors like mocha heath bar, vanilla crunchberry, strawberry mango and cool mint chip. It will also serve non-alcoholic and boozy beverages mixed by a “Botrista” robot, including iced coffee beverages, refreshing fruity lemonades, milk teas and slushes, with fun toppings such as traditional boba, popping boba and jellies.
