MOM’S APPLE FRITTERS (serves 6, about 2 dozen)

Ingredients

  • 3 cups thinly sliced (1/4 inch or less) peeled and cored green apples
  • 1 tablespoon lemon juice
  • 1 ½ cups flour
  • 2 eggs
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ⅔ cup milk
  • 1 tablespoon canola or grapeseed oil
  • Powdered sugar for garnish

Directions

Place apple slices in a bowl of water with the lemon juice. In a medium-size bowl, stir together flour and eggs. Add the sugar, baking powder, salt and milk, mixing until well combined but still lumpy. Drain the apples, then toss them into the batter and fold to combine. 

In a large skillet, warm the oil over medium-high heat. For each fritter, drop 2  tablespoons of batter onto the hot, greased skillet and fry until golden, turning once. Drain on paper towels and sprinkle with powdered sugar. Serve warm.

Chef Tip: More than any other, this recipe reminds Hampsten Fox of her mom. As a child, if Hampsten Fox wasn’t riding her bike, you could find her sitting in their big apple tree, watching her mom make pies through the kitchen window. She recommends you make these and share them with loved ones as often as possible.
